Chou Paste (Puffs)

Ingredients

1 cup Flour

1 cup Water

½ cup Butter (8 tbsp)

4 Eggs

Directions

This only makes about 30 small puffs so multiply the recipe.

1Put water in a sauce pan on low heat.

2Add the butter.

3When the butter has melted increase the heat to medium to bring to a boil.

4Stir in flour, until mixture forms a ball and starts to come away from the sides of the pan. Turn heat to low and stir for another three minutes.

5Remove pan from heat and let cool.

6Preheat oven at 400 F.

7Use buttered baking sheet unless using a non-stick type.

8Add eggs one at a time to mixture.

9Make sure each egg is completely mixed in to make a smooth mixture.

10On a buttered baking sheet, using a teaspoon place scoops about 1 inch apart on sheet. Bake for 15-20 minutes at 400 F or until turning golden brown.

11Cool on top of the oven or in the oven, turned off, for a few minutes so they don’t fall flat.

12Cut a little slit, squeeze open and stuff.
