Chocolate Fudge Cake

Ingredients

1 ½ cups coffee

1/3 cup dark rum or brandy

5 oz (150 g) unsweetened chocolate

1 cup (250 ml) unsalted butter

2 cups (500 ml) all-purpose flour

2 cups granulated sugar (500ml)

1 tsp baking soda

¼ tsp salt

2 large eggs, beaten

1 tsp vanilla

Icing sugar or chocolate glaze

Directions

1This cake can be frozen to serve at another time. Can also be served with whipping cream or pureed sweetened raspberries and custard
