Chocolate Glaze

Ingredients

2 squares (2oz) semi sweet chocolate, melted

2 tbsp (25ml) butter

1 cup icing sugar

3 tbsp (45ml) milk

Directions

1In a small saucepan over med heat, combine coffee and rum until hot. Reduce heat and add chocolate and butter, stir constantly until melted. Or use microwave. Stir sugar into chocolate mixture along with beaten eggs and vanilla. With electric mixer beat until batter is smooth.

2Grease or butter 10” tube or bundt pan and dust with cocoa powder. Pour in batter and bake at 300’f (150’c) oven for 1 ¼ hours or until tester comes out clean. Set cake on wire rack to cool completely in pan before turning out. Sprinkle with icing sugar or drizzle glaze on top.
