Dried Apricot Jam

Ingredients

500 g Dried apricots

1 kg Sugar warmed

3 tbsp Lemon juice

60 g Slivered almonds (optional )

Directions

1Cover the apricots with water and soak them 24 hrs.

2Place the apricots in a saucepan with the water and simmer until soft.

3Add the sugar and the lemon juice to the apricots.

4Simmer the jam until it reaches the setting point.

5Stir in the almonds if using.

6Spoon the jam into warm sterilized jars

7When the jam is cold and set, seal the jars.

8Makes 1.25 liters.
