Christine’s Potatoes with Sun Dried Tomatoes & Basil

Ingredients

10 large potatoes

2 tbsp olive oil

4 medium leeks

2 cloves garlic crushed

1 cup sun dried tomatoes (cut up)

1/2 cup shredded fresh basil

600ml 35% cream

1/3 cup milk

1 cup grated parmesan cheese

1/2 tsp paprika

Directions

1Grease baking dish (lasagna dish)

2Thinly slice potatoes

3Heat oil in pan

4add leeks, garlic and cook,Stirring until leeks are soft

5Remove from heat and Stir in tomatoes, basil

6spread half of potatoes and put leek mixture over top

7then add remaining potatoes and leek mixture

8Pour combined cream, milk over potatoes

9Sprinkle with combined paprika and parmesan cheese

10Bake uncovered in oven for 2 hours on low heat 325° (***temperature may vary***) until potatoes are cooked through.
