Orange Sweet Potatoes with Pecans

Ingredients

2 pounds (1 kg) sweet potatoes (about 4 medium)

3 tablespoons (50 mL) brown sugar

4 teaspoon (1 mL) cinnamon

2 tablespoons (25 mL) butter

2 tablespoons (25 mL) frozen orange juice concentrate, undiluted

1 teaspoon (5 mL) grated orange rind

1/4 cup (50 mL) chopped pecans

Directions

1Peel sweet potatoes and cut into half-inch (1-cm) slices.

2Arrange sweet potato slices in a shallow baking dish. Add quarter cup (50 mL) water and cover with microwave-safe plastic wrap. Microwave at High (100 per cent) power for 10 minutes or until sweet potatoes are tender when pierced with a knife.

3In a small glass dish, blend the brown sugar and cinnamon together until no lumps remain. Add the butter, orange juice and rind. Microwave at High for 45 seconds, until butter is melted.

4Stir the sauce and pour over the sweet potato slices; sprinkle with chopped pecans.

5The dish may be refrigerated at this stage.

6To reheat: Microwave sweet potatoes, covered, at High for five to six minutes until piping hot. Serve immediately.
