Country Skillet Corn

Ingredients

Ingredients for 6 servings

6 ears fresh corn or 272 cups frozen corn kernels

6 slices bacon

1/2 cup water

2 tsp. sugar

1/2 tsp. salt

1/4 tsp. pepper

Directions

Preparation:

1Remove husks and silk from corn. With sharp knife, cut kernels from each cob; set kernels aside.

2In large skillet, cook bacon over medium heat until crisp. Remove from skillet; drain on lpaper towels.

3Pour off all but 3 Tbs. bacon drippings from skillet. Add corn, water, sugar, salt and pepper to skillet. Cook, stirring frequently, 15-20 minutes or until corn is tender. Crumble bacon and add to skillet; cook, stirring, about 1 minute.

Cals./serving: about 170

Preparation: 40 minutes; total time, 50 minutes
