Bev’s Zucchini Bread

Ingredients

4 eggs

2 cups sugar

1 cup Veg oil

2 cup grated unpeeled zucchini

1 cup chopped nuts (optional)

1 cup raisins

3 ½ cups flour

1 tsp salt

1 ½ tsp baking soda

1 tsp cinnamon

¾ tsp baking powder

1 ½ tsp vanilla

Directions

1Beat eggs, add sugar then veg oil. Mix together dry ingredients. Add the egg mixture alternately with zucchini. Add walnuts and raisins, then vanilla. Grease and flour pans

22 5”x 9” loaf pans. Pour in mixture. Bake at 350’f for 55 mins. Cool 10 mins in pans.
