Carrot Haliva

Ingredients

½ lb Carrots

3 cups Milk

5 oz Sugar

1 tsp Golden Syrup

2 ½ oz Unsalted butter

1 oz Sultanas (Raisins)

6 Cardomon seeds crushed, decorations

A few blanched almonds

Directions

1Peel carrots, then grate them and put into a heavy pan with the milk. Cook the mixture steadily, stirring frequently with a spoon until it becomes almost solid. (This can take up to an hour) Now add the sugar, the golden syrup, butter, and sultanas. Cook taking care to stir continuously until the mixture starts to leave the sides of the pan. About 15 to 20 minutes.
