Chicken Egg Foo Yong

Ingredients

6 eggs

1/2 teaspoon salt

1 cup cooked chicken or turkey, cubed

1/2 cup onions, chopped

1/2 cup celery, chopped

1 cup sliced mushrooms

2 scallions, minced

2 teaspoons soy sauce

1 teaspoon dry sherry

2 tablespoons vegetable oil

Directions

1BEAT THE eggs, add the salt, stir, then add remaining ingredients. Heat a small frying pan or wok and add the vegetable oil. Add about 3 tablespoons of the egg mixture and fry until the bottom is light brown. Turn and brown other side. Remove the pan and keep warm while making the remaining omelets.

2Serve with extra soy sauce. Makes 6 to 8 omelets.
