Creamy Rice Pudding

Ingredients

1 can (385 ml) evaporated milk

1 1/3 cups water

½ cup long grain rice

2 eggs

1/3 cup sugar

¼ tsp ground cinnamon

½ cup raisins (optional)

1 tsp vanilla

Directions

1In heavy saucepan, combine milk, water and rice. Stir until mixture boils, reduce heat to low and cover. Cook for 40 min longer, stirring frequently. In small bowl, beat together eggs, sugar and cinnamon. Stir into hot rice mixture with raisins. Cook and stir 3 min longer or until mixture is thickened. Remove from heat, stir in vanilla. Serve warm or cool. Makes 4 –3/4 cup servings
