1Sift flour and mixed spice into a mixing bowl. Rub in the margarine until the mixture resembles fine breadcrumbs. Mix in the sugar and the mixed fruit and peel. Lightly beat eggs and milk together and mix into the other ingredients. Place the mixture in a 10” cake pan, previously lined all around the inside with grease proof paper and brushed over with melted margarine. Smooth the top and sprinkle with a little castor sugar. Bake in a pre-heated oven (360 f) on middle shelf for 1 ¼ - 1 ½ hours.
2Variations:
3Spice saltana Cake: Add 1 heaped tsp mixed spice with the flour and fold in 4 –6 oz sultanas instead of mixed fruit and peel.
4Ginger Cake: Add 1 heaped tsp ground ginger with the flour and fold in 2 oz. Finely chopped crystallized ginger instead of mixed fruit and peel.
5Small Cakes: Follow the original recipe. Place the mixture in 18-20 small muffin top pans. Bake in pre-heated oven 380f for 20-25 minutes.
