Dried Fruit Muffins

Ingredients

Replace butter and milk with applesauce and buttermilk. Use egg whites instead of whole eggs.

1 cup all-purpose flour

2/3 cup buttermilk

¾ cup whole-wheat flour

1/3 cup unsweetened applesauce

¾ cup sugar

1 tsp almond extract

1 tbsp baking powder

1 cup dried fruit

2 egg whites

Directions

1Preheat oven to 400F Lightly coat large muffin tin with non stick vegetable oil spray.

2In a large bowl combine flours, sugar, and baking powder making well in center

3In a medium bowl, beat egg whites until foamy, add buttermilk, applesauce and almond extract.Add to dry ingredients. Fold in dry fruit.

4Pour into muffin cups. 12 reg. Or 6 three inch cups.

5Bake 22 – 25 mins. Let cool 5 mins in pan on wire rack. Transfer muffins to wire rack to finish cooling.
