Preparation:
1In 2-quart sauce pan, combine first 4 ingredients. Bring to boil over medium heat. Add flour all at once. Cook, stirring vigorously, 2 minutes or until mixture leaves side of pan; cool 5 minutes. Beat in eggs, one at a time, until mixture is smooth and shiny. Beat in cheese. Cool 10 minutes. Preheat oven to 375°. Grease baking sheet. Drop 8 equal-size mounds onto sheet to form a circle with mounds just touching each other. Bake 40-45 minutes or until puffy and brown. To serve, spoon chicken mixture into ring in half horizontally and fill.

Preparation:
1In skillet, melt 2 Tbs. butter over medium heat. Add next 3 ingredients. Cook, stirring, 5 minutes. Add mushrooms. Cook, stirring, 4 minutes. Add remaining 2 Tbs. butter, melt. Stir in flour and seasonings. Cook, stirring, 1 minute. Gradually add milk and sherry. Cook, stirring, until mixture boils and thickens. Reduce heat; stir in cream, chicken, almonds and cheese; heat through.
