Potato Salad

Ingredients

Main Ingredients:

3-4 lbs of Potatoes (24 small/medium sized)

1 Cooked chicken breast (Shreded)

2 Eggs (Hard Boiled – 12 minutes in boiling water)

2 Can of Peas and Carrots (large)

¼ Onion (finely chopped)

Sauce Ingredients:

3 cups Mayonnaise

2 Tbsp Olive Oil

1 Tbsp Worcheshire Sauce

1 Tbsp Mustard

1 Tbsp Bitters (Angostura)

2 Tsp Old Bay Seasonning

2 Tsp Salt

2 Tsp Pepper

Fresh Parsley (finely chopped)

Fresh Basil (finely chopped)

Directions

1Cook potatoes until cooked through but still firm.

2Mix all Main ingredients in large bowl except for the eggs.

3Mix all Sauce ingredients in another bowl until well blended.

4Pour sauce into main ingredients and fold together until sauce is completely blended.

5Finally dice the hard boiled eggs and spread on top, mix lightly.
