Sausage Balls With Potatoes

Ingredients

Here's a hearty dish sure to delight one and all.

1 3/4 lbs. potatoes, scrubbed

2 onions, diced

1/2 lb. bulk pork sausage

1/8 tsp. hot paprika

1 cup beef stock

salt and ground white pepper to taste

3 tbsps. vegetable oil

3 bacon slices, diced

2 tbsps. chopped parsley (optional)

1 large red bell pepper, seeded, cut in strips

Directions

1Cook unpeeled potatoes in boiling salted water until tender. Drain potatoes. Cool, peel and slice. Set aside.

2Shape sausage into small balls. Pour stock into a small saucepan; bring to a boil. Add sausage balls to boiling stock, reduce heat to very low, cover and simmer 10 minutes. Remove from heat; keep warm. Skim off fat.

3Heat oil in a skillet, add bacon and cook until crisp. Remove from pan. Add onions and bell pepper to drippings; brown quickly. Stir in potatoes and paprika. Cook, stirring, until potatoes are browned.

4Reduce heat. Stir in cooked bacon and sausage balls and any remaining stock; heat through. Season with salt and pepper.

5Sprinkle with parsley if desired.

Preparation time: 10 to 12 minutes.
Cooking time: 40 to 45 minutes.
Serves 4.
