Soupe à L’Italienne

Ingredients

2 tbsp Salad oil

2 Medium onions, chopped

3 Cloves garlic, chopped

1 Green pepper, diced

2 Zucchini, thinly sliced

2 Large celery stalks, diced

2 28oz Cans of tomatoes

6 cups Chicken stock

1 tsp Salt

1/2 tsp Oregano

1 tsp Dried Basil

Grated Parmesan cheese

Pepper to taste

Directions

1Put oil in heavy pot, add onion, garlic and green pepper.

2Sauté until soft, about 10 minutes, add vegetables, tomatoes, stock and seasonings.

3Bring to boil and simmer for 10 to 12 minutes.

4Taste for seasoning.

5Serve with cheese sprinkling on top and garlic bread on side.
